We started The Chef’s Cottage in 2013 selling Jamaican food. It’s mostly just jerk chicken and… well… jerk chicken!
Before this, I’d been in the catering industry for a while – working in kitchens and stuff like that – but in my last job I was training restaurant staff, and it proved to be very time consuming. There was no time for family – it got to the point where I thought, “Enough is enough”, and I handed in my resignation. Now I have lots of family time and ‘me’ time, too.
I love working on the market because of the independence and the people – they’re absolutely lovely, y’know? I meet so many characters. Actually, I have a funny story – a customer came and asked me, “What kind of meat is in your chicken burger?” I found it absolutely hilarious. I said, “Errr, chicken?” and he said, “No but what kind of meat.” I was like, “…Chicken!”
My best seller is definitely the chicken wrap – it’s what my regulars come back for. They’ll never change their order – I know what to do as soon as I see them.
